Tis the Season…Apples!

         Apples are great just as they are but……

Apple Cake with Caramel Glaze  … wonderful with cinnamon ice-cream …oh my!

CAKE:

3 sticks of unsalted butter

1 c. of granulated sugar

1 c. of light brown sugar

3 eggs

3 c. of flour

1 teaspoon baking soda

3 teaspoons ground cinnamon

1/2 teaspoon of freshly grated nutmeg

1/2 teaspoon of salt

5 Granny Smith apples, peeled, cored, and cut into a 1/2 in. dice

1 1/4 c. chopped pecans or walnuts

2 1/4 teaspoons of vanilla extract

Heat oven to 325   Butter and flour 9 x 13 pan.

Using an electric mixer, beat the butter and sugars together for 3-5 minutes.  Add the eggs, one at a time.   In another bowl mix flour, baking soda, cinnamon, nutmeg, and salt.  Using a wooden spoon, gradually add the flour mixture to the egg mixture.  The batter will be very thick.  Add apples, pecans, and vanilla.  Bake for 50-60 minutes.

CARAMEL GLAZE:

4 Tablespoons of unsalted butter

1/4 c. granulated sugar

1/4 c. brown sugar

1/8 teaspoon salt

1/2 c. of heavy cream

Melt butter in medium size saucepan.  Add the granulated and brown sugars and salt.  Cook, stirring frequently, for 2 minutes.  Sir in the cream and bring to a boil.  Cook, stirring constantly, for 2 more minutes.  Remove from heat.  When cake is slightly cool, 10 minutes, put holes in top of cake with fork or knife.  Pour caramel glaze on top of cake.  Serve Warm.

Looking forward to a great Football Weekend…just the perfect weather to tailgate with friends.  Need a little R & R…working hard this week to catch up…not complaining…love my clients.

Missing my two girls (Cal. and Az.) …just talked with them both this morning… they were just home for a family wedding last weekend…headed West soon for a visit and they will both be home for the Holidays!  Why did we raise such independent, productive, happy women???  Just teasing girls…wouldn’t want it any other way.
