Pumpkins…BEST Pumpkin Cake…October 15, 1985

October 15, 1985…..Emily’s Birth date…and her favorite Birthday Cake is Pumpkin Cake.

This cake is very moist and the cream cheese frosting…very good…I usually start making this cake around October 15 and continue until Christmas.  My family prefers this cake over pumpkin pie.  I won’t see my “pumpkin” on 10/15 but I am sure I will bake her favorite cake during the holidays.


4 eggs

2 c. sugar

1 c. oil

2 c. flour

2 t. flour

2 t. baking soda

2 t. cinnamon

1/2 t. salt

2 c. pumpkin

2 t. vanilla

Prepare 9″x 13″ cake pan.  Mix ingredients in the order listed.  Pour batter into cake pan.  Bake at 350 for 25-30 minutes.  Do not over bake.  Cake will be soft in middle.

Frosting:  8 oz. cream cheese, 3 to 4 cups of confectioner’s sugar, 1 t. vanilla. With mixer, cream together all ingredients.  Frost cake when cool.
