George’s Pumpkin Soup….so good and easy, very easy

This recipe is so easy, very filling, and low in Calories…good way to start the Thanksgiving Meal.

4 T. margarine or butter

1 cup of finely chopped onion

1 cup of finely chopped celery

6 cups  of chicken broth

2 cups of canned pumpkin

1 cup of white wine

2 t. sugar

1 1/2 t. salt

1/2 t. cinnamon

1/4 t. allspice…I would increase this amt. if you like the spice

In large pan melt butter.  Add onion and celery and saute till tender.  Add remaining ingredients.  Simmer uncovered stirring occasionally for 30 minutes.  Pour 1/2 soup in blender and puree till smooth.  Do this until all soup has been pureed.  May be prepared up to 24 hours in advance.   Refrigerate.  Heat till hot, stirring occasionally.  This soup, like most soups, is better warmed up.

This Thanksgiving we are headed to my niece’s where she will be preparing and hosting her first Thanksgiving…when I asked what can we bring…She said, ” Just send Uncle George over in the morning.”  Yanok sisters are headed East for Christmas…countdown begins after Thanksgiving.
